Ingredients

  • 2 potatoes for puree
  • 30 g Chorizo
  • 1 lettuce heart
  • 1 spring onion
  • 2 strand Parsley
  • 10 mL (2 teaspoon) cider vinegar
  • 45 mL (3 tablespoon) Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  • Peel the potatoes and cut them into pieces.
  • Peel the onion and cut in 2.
  • Immerse the potato and onion into the boiling water.
  • Add the chorizo and oil. Add salt and pepper and cook for 15 minutes.
  • Prepare the lettuce and vinaigrette.
  • Purée the potato with a potato masher, add the onion.
  • Simmer over low heat for 3 minutes, stirring occasionally.
  • Sprinkle the potato purée with parsley.
  • Slice the chorizo and scatter over the purée before serving.
  • Serve the chorizo purée along with the seasoned lettuce.
