Ingredients

OAT CRUMBLE

  • 1 cup rolled oats
  • 1 tbsp honey or maple syrup
  • 1 tsp vegetable oil
  • Pinch of cinnamon
  • Pinch of salt

PUMPKIN SPICE & OAT SMOOTHIE

  • 1½ cups rolled oats
  • 4 cups Natrel Lactose Free 2%
  • 2 tbsp honey or maple syrup
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • ¼ tsp cinnamon
  • ¼ tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground allspice

Instructions

  • Preheat oven to 350?F. Toss all ingredients together and place on a baking sheet.
  • Cook for 5 minutes, stir, and return to oven until golden brown, another 3 to 5 minutes. Let cool completely.
  • In a jar or plastic container, soak the oats in 1 cup of Natrel Lactose Free for at least 8 hours. This softens them and makes a creamier smoothie.
  • In a blender, combine the soaked oats, honey (or maple syrup), pumpkin purée, remaining Natrel Lactose Free and spices. Blend until smooth, adding more Natrel Lactose Free if the mixture is too thick.
  • Pour into glasses and top with cooled oat crumble.
