Ingredients

  • 3 lb (1.5 kg) beef eye of round roast
  • 2 tbsp canola oil
  • 1 tsp each salt and pepper
  • 1 bag (650 g) McCain® Superfries® Straight Cut
  • 1 lb asparagus, trimmed and steamed

Instructions

  • Preheat oven to 450?F (230?C). Rub roast with oil and season all over with salt and pepper; transfer to baking sheet. Roast for 50 to 60 minutes or until meat thermometer registers 130°F (55°C) for rare, or 145°F (63°C) for medium-rare. Tent with foil; let rest for 10 minutes.
  • Meanwhile, prepare McCain® Superfries® Straight Cut according to package directions.
  • Hollandaise Sauce: In small saucepan, heat butter over medium-high heat until melted and bubbling. Meanwhile, in blender, purée egg yolks, lemon juice and mustard until smooth; with motor running, pour the bubbling butter into blender. Season with salt and pepper to taste. Garnish with paprika (if using). Serve immediately.
  • Slice roast and serve with McCain® Superfries® Straight Cut, steamed asparagus and Hollandaise Sauce.
