One-Pan Chorizo and Rice Skillet

Ingredients

  • 1 tbsp canola oil
  • 5 links fresh chorizo sausage (1 pound), cut into 2-inch pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 1/2 cups instant white rice
  • 1 1/2 cups water
  • 1 cup PACE® Chunky Mild Salsa
  • 1 sweet pepper, coarsely chopped
  • 1 can black beans, rinsed and drained

Instructions

  • Heat oil in a large deep skillet set over medium-high heat.
  • Brown sausage and onion, stirring often, for 8 minutes; drain fat.
  • Stir in peppers.
  • Cook for 3 minutes, until vegetables are just beginning to soften.
  • Stir in rice, water and salsa.
  • Cover and simmer 5 minutes until sausage is cooked through, vegetables are tender-crisp and rice is tender.
  • Remove from heat. 
  • Add beans and let stand, covered, for 5 minutes, or until liquid is absorbed.
