No-Stress Salad

Ingredients

  • 1 can (170 g) Clover Leaf® Solid or Chunk White Albacore Tuna in Water, drained
  • 1 cup Baby romaine lettuce leaves, chopped
  • ½ cup Baby spinach leaves
  • ½ cup Baby arugula leaves
  • 1 Radish, thinly sliced
  • ¾ cup Red, green or yellow bell pepper, chopped
  • ½ cup Cherry tomatoes, halved
  • ¼ cup Red onion, thinly sliced
  • Garnish with capers, pumpkin seeds and fresh dill or parsley (optional)

Dressing :

  • 4 tbsp Extra virgin olive oil
  • 2 tbsp Vinegar or lemon juice
  • 2 tsp Dill or parsley, fresh, finely chopped
  • 1/2 tsp Dijon mustard
  • Pinch of sugar
  • Salt and pepper, to taste

Instructions

  • Place lettuce, spinach and arugula leaves in a medium bowl.
  • Top with radish, peppers, tomatoes, onion, and half of the drained tuna.
  • Whisk dressing ingredients in a small bowl until well combined.
  • Season to taste.
  • Pour dressing onto salad and gently toss together.
  • Top with remaining tuna.
  • Garnish with capers, seeds and fresh herbs (optional).
  • Serve immediately.
