Ingredients

  • 2 tbsp fresh coriander, finely chopped
  • 1/4 cup (60ml) fresh lemon juice
  • 2 cloves garlic, crushed
  • 2 tbsp olive oil
  • 1 tbsp Moroccan seasoning
  • 750g beef porterhouse steak, trimmed, cut into 3cm pieces
  • 8 pre-soaked wooden skewers
  • 1 (200g) red capsicum, diced
  • 1 (200g) yellow capsicum, diced
  • 2 (240g) zucchinis, sliced
  • Olive oil spray
  • Cous cous salad, for serving

Instructions

  • Combine coriander, lemon juice, garlic, oil, and seasoning in a medium bowl. Add the beef and toss to coat. Cover with plastic wrap and place in the fridge for 20 minutes to marinate. Thread the beef onto bamboo skewers alternately with capsicum and zucchini.
  • Preheat a chargrill or barbecue grill on medium-high. Spray skewers with oil. Cook for 2-3 minutes each side for medium or until browned and cooked to your liking. Set aside for 5 minutes to rest. Serve with a cous cous salad.
