Ingredients

  • 8 eggs
  • 60 mL (1/4 cup) milk
  • 15 mL (1 tbsp.) orange zest (approximately 1 orange)
  • 240 g smoked salmon, chopped
  • 2 leeks, chopped
  • 250 mL (1 cup) grated Swiss cheese
  • 30 mL (2 tbsp.) fresh chives, minced
  • to taste salt

Instructions

  • Preheat oven to 180°C (350°F) and coat 12 muffin tins with cooking spray.
  • Whisk the eggs, milk, and orange zest in a bowl.
  • Add the salmon, leeks, cheese, and chives.
  • Season with salt and pepper to taste.
  • Divide the egg mixture evenly between the muffin tins and bake for 20 minutes.
  • Let cool for 5 minutes before removing them from the pan.
