Ingredients

  • 1 box UNCLE BEN’S® Long Grain & Wild Rice, Original Recipe
  • Non-stick cooking spray
  • 1 cup onion, chopped
  • 1/2 cup carrots, peeled and finely chopped
  • 3 tablespoons sherry
  • 2 tablespoons all-purpose flour
  • 4 cups canned, fat-free (or homemade) chicken or vegetable stock
  • 1 cup cooked, chopped chicken or turkey
  • 1/2 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  • Cook rice according to package instructions, set aside.
  • Coat a large pot with nonstick cooking spray and sauté the onion and carrots over medium heat until tender, about 5 minutes. Add in the sherry and cook until the liquid is gone.
  • Stir in the flour until it has coated the vegetables evenly. Gradually add the broth and bring to a boil.
  • Add in the chicken and rice and stir until well combined. Let simmer 5 minutes or until chicken is warm.
  • Add 1/2 teaspoon lemon juice, and season with salt and pepper as desired.
