Lemon Butter Green Beans with Toasted Almonds Bacon & Feta

  • 1 tablespoon oil
  • ¼ cup sliced almonds
  • pinch of salt
  • salt
  • 16 ounces fresh green beans, rinsed and stems removed
  • 2 tablespoons Finlandia unsalted butter
  • 1 teaspoons lemon zest
  • 2 tablespoon lemon juice
  • 3 pieces of bacon, cooked and crumbled
  • salt and pepper, to taste
  • feta cheese, to taste

  • Place the oil and sliced almonds in a saute pan over medium heat and stirring to toast the almonds for 3-4 minutes. You will know when the almonds are toasted when they are a beautiful light brown color.
  • Season with a pinch of salt
  • Fill a saute or a frying pan with water to bring to a boil.
  • Add the green beans, cover, and cook until green beans are tender, about 3-4 minutes.
  • Meanwhile, melt the butter and lemon zest in another saute or frying pan over medium heat.
  • Once the green beans are tender, drain and add them to the same frying pan as the melted butter and lemon zest.
  • Add the lemon juice and bacon and toss to combine.
  • Taste and season with salt and pepper, add the toasted almonds and stir to combine.
  • Garnish with crumbled feta cheese.
