Ingredients

  • One 8.5-ounce package UNCLE BEN’S® READY RICE® Jasmine
  • One 5-ounce can Bumble Bee® Chunk Light Tuna in Water, drained
  • 1/2 cup shelled edamame (if frozen, thawed)
  • 1/2 red bell pepper, sliced 
  • 1/4 cup chopped green onion
  • 1/4 cup sesame ginger salad dressing
  • 4 cups (about 4 ounces) mixed baby lettuce
  • 2 tablespoons toasted sliced almonds

Instructions

  • Cook the rice according to package instructions. Pour the rice into a medium bowl and let cool.
  • When the rice is warm to the touch, but not hot, add the tuna, edamame, red pepper, green onion and dressing.
  • Stir together until the dressing is well incorporated.  
  • Serve the rice over the lettuce and garnish with toasted almonds. If desired, serve extra sesame ginger dressing on the side.
