Ingredients

  • 1 L (4 cups) arugula
  • 12 cubes hot smoked salmon
  • 45 mL (3 tbsp.) coarsely chopped capers
  • 250 mL (1 cup) halved cherry tomatoes
  • 45 mL (3 tbsp.) toasted pine nuts
  • 5 mL (1 tsp.) lemon zest
  • 30 mL (2 tbsp.) lemon juice
  • 10 mL (2 tsp.) honey
  • 60 mL (¼ cup) olive oil

Instructions

  • Combine all salad ingredients in a large bowl.
  • In a small bowl, mix lemon juice, lemon zest and honey.
  • Add oil in steady stream.
  • Toss salad with vinaigrette then divide into four equal servings.
