Heat the oil in a large heavy-based pot on a medium heat. Add the onion and garlic, and cook until soft.
Add in the spices and tomato paste, and cook until fragrant.
Then add in the mince and break it up with the wooden spoon as you stir it through, cook until it changes colour, then add in the tin of tomatoes, kidney beans and stock. Bring to the boil and then turn the heat down to low, cover and cook for about 30 minutes, stirring occasionally until the liquid has soaked into the meat and it's a thick, rich sauce consistency.
To make the salsa: add the avocados, salt and pepper and a squeeze of lemon juice into a bowl, then mash with a fork.
When the mince is cooked, serve it in a bowl with all the accompaniments and everyone can serve themselves at the table.
