Ingredients

  • ½ cup natural peanut butter (can substitute almond butter.)
  • ¼ cup Crosby’s Fancy Molasses
  • ¼ cup honey
  • 1/3 cup butter, melted (can substitute oil)
  • 1 tsp. vanilla
  • 1 egg
  • ½ cup flour
  • ½ cup whole wheat flour
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • 1 cup quick oats
  • ½ cup flaked coconut
  • ¼ cup dried cranberries or raisins
  • ¼ cup chocolate chips (optional)

Instructions

  • Preheat oven to 350 F
  • In a large bowl beat together peanut butter, molasses, honey, melted butter and egg.
  • In another bowl whisk flours, baking soda and baking powder. Beat into peanut butter mixture
  • Stir in remaining ingredients. Drop by heaping tablespoonful onto prepared baking sheet.
  • Bake 9-11 minutes.
