Ingredients

  • 30 mL (2 tbsp.) balsamic vinegar
  • 30 mL (2 tbsp.) olive oil
  • 4 firm, ripe tomatoes, cut in half horizontally
  • 175 mL (¾ cup) croutons, coarsely crumbled
  • 45 mL (3 tbsp.) coarsely chopped fresh basil
  • 1 mL (¼ tsp.) each of salt and pepper

Instructions

  • Preheat barbecue to medium-high.
  • In a small bowl, whisk balsamic vinegar with olive oil.
  • Lightly brush cut tomato sides with a little vinegar mixture.
  • Grill tomatoes cut-side down, until slightly tender, 3 to 5 minutes.
  • Baste again with vinegar mixture, turn and grill for 2 minutes more. 
  • In a bowl, toss croutons with basil.
  • Transfer tomatoes to a plate, cut-side up, drizzle with remaining vinegar mixture and sprinkle with salt and pepper and crouton mixture.
  • Serve immediately.
