Ingredients

  • 30 mL 2 tbsp. olive oil
  • 1 clove of garlic, minced
  • 30 mL 2 tbsp. fresh ginger, grated
  • 1 onion, chopped
  • 60 mL 4 tbsp. green curry paste
  • 625 mL 2 1/2 cups coconut milk
  • 1 broccoli, cut into florets
  • 1 green pepper, cut into strips
  • 500 g 1 1/4 lb. haddock fillet, cut into pieces
  • 2 Lebanese cucumbers, quartered
  • To taste medium desiccated unsweetened coconut
  • To taste fresh cilantro
  • 1 lime, cut into wedges

Instructions

  • Heat oil in a non-stick skillet.
  • Cook garlic and ginger for 1 minute.
  • Add onion.
  • Cook for 1 minute.
  • Add curry paste.
  • Cook for 1 minute.
  • Add coconut milk.
  • Add broccoli florets.
  • Cook for 2 minutes.
  • Add peppers.
  • Cook for 1 minute.
  • Remove vegetables with a slotted spoon and set aside on a plate.
  • Place fish pieces in coconut milk.
  • Cook for 3–5 minutes.
  • Add vegetables.
  • Season to taste with salt and pepper.
  • Gently mix and cook for 1 minute.
  • Garnish with fresh cucumber, coconut and fresh cilantro.
  • Serve with lime wedges.
  • Fish should be cooked for 10 minutes per inch of thickness.
  • So, if your piece of fish is a half-inch thick, it will only take 5 minutes to cook.
