Friendly Monster Cake Recipe

Prepare each cake mix according to package directions, using water, oil and egg whites, to make 3 (8-inch) cake layers. Cool completely.
Place 1 cake layer on serving plate, rounded side down. Spread top with 1/2 cup blue frosting. Level second cake layer. Place on top of frosting layer, cut side down. Spread top with 1/2 cup blue frosting. Top with remaining cake layer, rounded side up. Frost top and sides of cake with a thin layer of blue frosting.
Cut out large smile shape using fruit roll-up. Adhere to side of cake. Arrange 5 marshmallows, with curved sides down, flat end facing front, and edges touching, on top center of cake. Place remaining blue frosting in decorating bag fitted with medium star tip.
Beginning at bottom edge of cake and gradually working upward, pipe frosting onto cake, pulling decorating bag away from cake as you work, to make 3/4-inch lengths of frosting to cover entire cake, including the row of marshmallows. Stir yellow and red food colors into white frosting. Accent cake with orange frosting, as desired.
Microwave 1/3 cup orange frosting in small microwave-safe bowl on HIGH 5 to 10 seconds or until slightly melted when stirred. Dip 3 marshmallows halfway into frosting to coat. Arrange on top of frosted marshmallows on top of cake with orange frosting facing toward front. When frosting has set, press candy eyeballs onto frosted surfaces, as desired. Decorate unfrosted halves of marshmallows with remaining blue frosting, as desired.
