Ingredients

  • 4 cups Food Should Taste Good™ Multigrain Tortilla Chips
  • 4 eggs
  • 1/4 cup milk
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 1/4 cups cheddar cheese, grated
  • 1 cup black beans, drained and rinsed
  • 3/4 cup cherry tomatoes, chopped
  • 1/3 cup red peppers, chopped
  • 1/4 cup green onions, minced
  • 2 tablespoons fresh cilantro, minced
  • 1 avocado, sliced or diced
  • Sour cream and salsa for serving

Instructions

  • Preheat oven to low broil.
  • Place about 2 cups of chips in a cast-iron skillet or on a baking sheet, then sprinkle with 1/2 cup black beans and 1/2 cup cheese. Set aside.
  • In a bowl, whisk together eggs, milk, red pepper flakes and salt.
  • Heat a separate non-stick skillet over medium heat and add egg mixture.
  • Let eggs sit undisturbed until they start to set around the edges, about 2 minutes.
  • Using a rubber spatula, push the eggs from the edges into the center.
  • Continue until eggs are just set.
  • Remove the pan from the heat.
  • Put cast iron skillet in preheated oven for 2 minutes, until cheese is just melted.
  • Remove and sprinkle with half of eggs, then top with additional layer of chips.
  • Top with remaining eggs, beans, tomatoes, red peppers and finally, cheese.
  • Put back in oven for another 3 minutes, until cheese is melted.
  • Garnish with green onions, cilantro and avocado.
  • Serve with sour cream and salsa if desired.
