Ingredients

  • 4 (5 oz/150 g each) salmon fillets, such as steelhead or sockeye
  • 2 tbsp (30 mL) lemon juice
  • 2 tbsp (30 mL) olive oil
  • salt and pepper to taste
  • Cajun spice to taste
  • 4 hamburger or kaiser buns, split and warmed
  • 1/4 cup (60 mL) light mayonnaise
  • 4 lettuce leaves
  • 8 tomato slices
  • 8 to12 cucumber slices
  • 4 white or red onion slices
  • 4 yellow or red pepper slices

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Place salmon fillets on parchment. Drizzle fish with lemon juice and oil; season with salt, pepper and Cajun spice. Bake 12 to 15 min., or until just cooked through.
  • To assemble, spread buns with mayonnaise and fill salmon fillets, lettuce, tomato, cucumber, onion and red pepper. Close buns to serve.
