4 (5 oz/150 g each) salmon fillets, such as steelhead or sockeye
2 tbsp (30 mL) lemon juice
2 tbsp (30 mL) olive oil
salt and pepper to taste

4 hamburger or kaiser buns, split and warmed
1/4 cup (60 mL) light mayonnaise
4 lettuce leaves
8 tomato slices
8 to12 cucumber slices
4 white or red onion slices
4 yellow or red pepper slices

Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Place salmon fillets on parchment. Drizzle fish with lemon juice and oil; season with salt, pepper and Cajun spice. Bake 12 to 15 min., or until just cooked through.
To assemble, spread buns with mayonnaise and fill salmon fillets, lettuce, tomato, cucumber, onion and red pepper. Close buns to serve.
