Ingredients

  • ¾ cup plain flour
  • 2 tablespoons cornflour
  • ¼ teaspoon bicarb soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • Cold water, to bring to required consistency

Instructions

  • Sift dry ingredients into a mixing bowl.
  • Add water and whisk to incorporate ingredients to the required thickness, just slightly thicker than pancake batter.
  • Lightly coat fillets with flour, completely coat with batter. Hold over bowl to allow excess to drop off briefly then place in hot cooking oil.
  • After 2 minutes, turn and cook until browned.
