Ingredients

  • 300 ml or 1 1/4 cup sall-purpose flour
  • 125 ml or 1/2 cup granulated sugar
  • 15 ml or 1 tbsp baking powder
  • 1 ml or 1/4 tsp salt
  • 2 ml or 1/2 tsp ground cinnamon or nutmeg, optional
  • 375 ml or 1 1/2 cups All-Bran Original* cereal
  • 300 ml or 1 1/4 cups 2% milk
  • 1 egg (or 2 egg whites)
  • 50 ml or 1/4 cup vegetable oil
  • 250 ml or 1 cup coarsely chopped fresh cranberries
  • 15 ml or 1 tbsp grated orange rind

Instructions

  • In medium bowl, mix together flour, sugar, baking powder, salt and cinnamon.
  • Set aside.
  • In large mixing bowl, mix together cereal and milk.
  • Let stand for 5 minutes or until cereal is softened.
  • Stir in egg and oil; beat well.
  • Stir in cranberries and orange rind.
  • Add flour mixture, stirring only until combined.
  • Spoon batter into 12 large muffin tins, coated with non-stick cooking spray or lined with muffin papers.
  • Bake at 200°C (400°F) for 20 to 22 minutes or until browned and firm to the touch.
  • Serve warm.
  • May be frozen.
