Ingredients

  • 1 tsp (5 mL) olive oil
  • 1/2 cup (125 mL) leek, cleaned and thinly sliced (pale green and white parts only)
  • 2 chorizo sausage (casing removed), sliced into bite size pieces
  • 1 cup (250 mL) red bell peppers, medium diced
  • 1 tbsp (15 mL) garlic, chopped
  • 1 tbsp (15 mL) Italian seasoning
  • 1 lb (454 g) cod, cut into large chunks
  • 1/2 cup (125 mL) canned diced tomatoes
  • 1/2 carton CAMPBELL’S® No Salt Added Ready to Use Chicken Broth
  • 1 cup (250 mL) fresh spinach
  • 1 tsp (5 mL) lemon juice
  • 1 tbsp (15 mL) fresh cilantro, chopped

Instructions

  • In a sauce pan,heat the oil over medium heat. Add the leek,sausage,bell peppers and garlic and sauté for 4 minutes or until the sausage is cooked.
  • Add the Italian seasoning and continue to sauté for another minute.
  • Add the cod and cook for another 2 minutes or until the cod is browned. Add the diced tomato and the broth then lower heat and simmer for 5 minutes.
  • Remove from heat and add the spinach,lemon juice and cilantro.
