Ingredients

  • 375 mL (1½ cups) all-purpose flour
  • 250 mL (1 cup) oat flakes
  • 10 mL (2 tsp.) baking powder
  • 2 mL (½ tsp.) baking soda
  • 250 ml (1 cup) grated raw squash
  • 75 mL (1/3 cup) vegetable oil
  • 125 ml (½ cup) milk
  • 1 egg
  • 125 mL (½ cup) maple syrup
  • 175 mL (¾ cup) semi-sweet chocolate chips

Instructions

  • Place rack in middle of oven.
  • Preheat oven to 180°C (350°F).
  • Grease a loaf pan. 
  • Combine all dry ingredients in a large bowl.
  • Add grated squash.
  • In another bowl, combine oil, milk, egg, and maple syrup using a whisk.
  • Add to dry ingredients and mix gently with a spatula until barely moist.
  • Add chocolate chips and combine. 
  • Place dough in loaf pan.
  • Bake for about 50 minutes or until a toothpick inserted into centre comes out clean.
  • Set aside to cool.
  • Remove from pan and cool on wire rack.
