Ingredients

  • 3 large baking potatoes
  • 2 tbsp (30 mL) vegetable oil
  • 1 tbsp (15 mL) chili powder
  • 1 tsp (5 mL) Tabasco or other hot sauce
  • 1/2 tsp (2 mL) ground cumin
  • 1/3 cup (75 mL) freshly grated Parmesan cheese
  • 2 tbsp (30 mL) finely chopped fresh parsley
  • salt to taste

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Cut potatoes in half lengthwise; then cut each half into 4 to 6 long wedges. Place in large bowl with oil, chili powder, hot sauce, cumin and salt. Toss to coat.
  • Arrange potato wedges in single layer on baking sheet. Bake 40 min., turning over halfway, to ensure even browning. Transfer to serving platter; sprinkle with parmesan and parsley to serve.
