  • 1 8.8-oz package UNCLE BEN’S® READY RICE® Long Grain & Wild
  • 1 tablespoon Olive Oil
  • 1/2 medium Red Bell Pepper, Chopped
  • 1 cup Chopped Onions
  • 1 cup Chopped Broccoli
  • 1/2 cup Reduced-fat 2% Milk
  • 1 tablespoon Whole-Wheat Flour
  • 4 oz Light Cream Cheese
  • 1/2 teaspoon each Salt & Pepper
  • 1 teaspoon Garlic Powder
  • 1 cup Chopped Cooked Chicken Breast
  • 1/4 cup Shredded reduced-fat Sharp Cheddar Cheese

Instructions

  • Cook UNCLE BEN’S® Ready Rice Long Grain & Wild according to directions on the pack.
  • In a large skillet heat olive oil over medium-high heat. Add bell peppers, onions and broccoli and cook for 5 minutes or until softened. Remove from pan and set aside.
  • Reduce heat to low and in the same skillet add milk and flour. Whisk until flour breaks down and begins to thicken. Should be done in about 1 minute.
  • Add cream cheese to mixture and cook for 3 minutes or until melted. Stir in salt, pepper, and garlic powder. Mix well.
  • Add vegetable mixture, chicken, and rice to cheese sauce. Stir until well coated.
  • Divide mixture evenly into 4 (1-cup) oven safe dishes. Sprinkle each with 1 tablespoon cheddar cheese. Bake at 375°F for 5 minutes or until cheese is melted. Serve immediately.
