Cook UNCLE BEN’S® Ready Rice Long Grain & Wild according to directions on the pack.
In a large skillet heat olive oil over medium-high heat. Add bell peppers, onions and broccoli and cook for 5 minutes or until softened. Remove from pan and set aside.
Reduce heat to low and in the same skillet add milk and flour. Whisk until flour breaks down and begins to thicken. Should be done in about 1 minute.
Add cream cheese to mixture and cook for 3 minutes or until melted. Stir in salt, pepper, and garlic powder. Mix well.
Add vegetable mixture, chicken, and rice to cheese sauce. Stir until well coated.
Divide mixture evenly into 4 (1-cup) oven safe dishes. Sprinkle each with 1 tablespoon cheddar cheese. Bake at 375°F for 5 minutes or until cheese is melted. Serve immediately.
