Ingredients

  • 8 good-quality pork sausages, sliced on the diagonal
  • Drizzle of olive oil
  • Handful of purple sprouting broccoli, trimmed, cooked until just tender
  • 1 tbsp. flour
  • 500ml/18fl oz milk
  • Handful of grated cheddar cheese
  • 1 tsp. mustard
  • Pinch of paprika, for topping (optional)

Instructions

  • First, make the cheese sauce by heating the butter in a pan, then remove from heat and beat in the flour. Trickle in a little milk and return to the heat. Keep stirring and adding milk until sauce is smooth. Remove from heat, stir through the cheese and mustard, then season. Set aside.
  • Add the sausages to a roasting tin or divide between individual tins. Toss with oil and put in the oven for about 20 mins, or until starting to turn pale golden.
  • Add broccoli and toss together, then pour over the cheese sauce. Cook for a further 20 mins until golden and bubbling. Sprinkle with paprika, if using, and serve straight to the table with some crusty bread.
