8 good-quality pork sausages, sliced on the diagonal
Drizzle of olive oil
Handful of purple sprouting broccoli, trimmed, cooked until just tender
1 tbsp. flour
500ml/18fl oz milk
Handful of grated cheddar cheese
1 tsp. mustard
Pinch of paprika, for topping (optional)
YIELD 4 servings
First, make the cheese sauce by heating the butter in a pan, then remove from heat and beat in the flour. Trickle in a little milk and return to the heat. Keep stirring and adding milk until sauce is smooth. Remove from heat, stir through the cheese and mustard, then season. Set aside.
Add the sausages to a roasting tin or divide between individual tins. Toss with oil and put in the oven for about 20 mins, or until starting to turn pale golden.
Add broccoli and toss together, then pour over the cheese sauce. Cook for a further 20 mins until golden and bubbling. Sprinkle with paprika, if using, and serve straight to the table with some crusty bread.
