Cheddar-Parmesan Potatoes

Ingredients

  • 2 Large, unpeeled potatoes washed
  • 2 Tbsp.(30 mL)Olive oil
  • Salt and pepper to taste
  • 2 tsp.(10 mL)Herbes de Provence
  • 3/4 cup (190 mL)Grated cheddar
  • 1/2 cup( 125 mL)Grated Parmesan
  • 4 Slices of ham cut into small squares
  • 5 Green onions, minced

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice potatoes 1/4 in. (6 mm) thick. Pat dry with paper towels and lay out on a baking sheet lined with parchment paper.
  • Brush potatoes with olive oil and season with salt, pepper and herbes de Provence.
  • Bake 15 minutes.
  • Meanwhile, in a bowl, mix Cheddar, Parmesan, ham and green onions together. Spread over potatoes.
  • Bake another 5 minutes or until cheese is melted. Serve.
  • Suggestion: Serves: 4
