Ingredients

  • 4 small boneless skinless chicken breasts (1 lb./450 g)
  • 3 cups frozen vegetable blend (red peppers, broccoli, mushrooms)
  • 1 cup water
  • 1 pkg. (120g) Stove Top Stuffing Mix for Chicken
  • 1/2 cup Cracker Barrel Shredded Mozza-Cheddar Cheese

Makes 4 servings, 1/4 recipe (278 g) each.

Instructions

  • 1. Cook chicken in large covered skillet sprayed with cooking spray on medium-high heat 2 to 3 min. on each side or until chicken is done (170ºF) and browned on both sides. Remove chicken from skillet; cover to keep warm.
  • 2. Add vegetables and water to skillet; bring to boil. Stir in stuffing mix just until moistened.
  • 3. Top with chicken and cheese; cover. Cook on low heat 5 min. or until cheese is melted.
