Ingredients

  • 375 mL 1 1/2 cups cherry tomatoes
  • 1 red pepper, chopped
  • 6 garlic cloves, halved
  • 60 mL 1/4 cup olive oil
  • 1 mL 1/4 tsp salt and pepper
  • 60 mL 1/4 cup chopped toasted almonds
  • 75 mL 1/3 cup thinly sliced fresh basil, divided
  • 30 mL 2 tbsp lemon juice
  • 1 /2 baguette, cut into 12 rounds

Instructions

  • Preheat oven to 425 F (220 C).
  • Toss together cherry tomatoes, red pepper, garlic, oil, salt and pepper.
  • Transfer to 9-inch (23 cm) square baking dish.
  • Roast for 12 to 15 minutes or until vegetables are slightly charred.
  • Toss together roasted vegetables, almonds, 3 tbsp (45 mL) basil and lemon juice; set aside.
  • Preheat broiler.
  • Arrange baguette slices on foil-lined baking sheet.
  • Broil for about 1 minute per side or until golden and toasted.
  • Before serving, top each baguette slice with some of the roasted tomato mixture.
  • Drizzle with some of the pan juices. Garnish with remaining basil.
