Ingredients

  • 3 cup plain flour
  • 2 cup sugar
  • 1 1/2 tsp bicarbonate of soda
  • 1 tsp salt
  • 2 cup carrot grated peeled
  • 450 g (crushed) canned pineapple
  • 1 1/2 cup sunflower oil
  • 4 egg
  • 1 cup pecans

Instructions

  • Sift dry ingredients into a bowl.
  • Add carrot, undrained pineapple, oil, eggs and pecans.
  • Mix well.
  • Pour into a greased and lined lamington pan.
  • Bake at 180C for approximately 50 minutes or until cooked.
