Ingredients

  • 1 pkt MAGGI 2 Minute Noodles Chicken Wholegrain
  • 8 eggs, lightly beaten
  • 1 (25g) spring onion, thinly sliced
  • 1 (120g) carrot, grated
  • 1 (200g) red capsicum, finely chopped
  • 1 (90g) zucchini, grated
  • 2 tsp vegetable oil
  • 4 (100g) shortcut bacon rasher
  • 1 cup (20g) baby spinach (sautéed, optional)

Instructions

  • Cook MAGGI 2 Minute Noodles Chicken as per packet instructions, drain and keep warm.
  • In a large bowl combine cooked MAGGI 2 Minute Noodles Chicken, 4 eggs, spring onion, carrot, capsicum and zucchini.
  • Heat oil in a frying pan on medium heat. Spoon 2 tbsp of fritter mixture into pan and cook for 2-3 minutes on each side or until golden and crunchy. Repeat with remaining mixture to make 4 fritters.
  • Add bacon to cleaned frying pan and cook for 2 minutes on each side or until golden and crispy. Cook extra 4 eggs sunny side up or until liking. Top noodle fritters with bacon, eggs and baby spinach.
