Ingredients

  • 1 pound elbow macaroni, I prefer the large macaroni
  • 1 bunch of Broccolini, chopped (approximately 3 cups)
  • 2 tablespoons of butter
  • 1/4 cup of sweet onions, chopped
  • 1 teaspoon minced garlic
  • 4 tablespoons all purpose flour
  • 2 cups of 2% milk
  • 2 cups of white wine - I used Gallo Chardonnay
  • 2 cups of cheddar cheese cheese, shredded
  • Sea salt and fresh ground pepper to taste

Instructions

  • Bring a large pot to water to a boil. Add the macaroni and cook at a boil until just tender or al dente
  • Drain, rinse in cold water and set aside
  • Preheat the oven to 350 degrees
  • In a large skillet or frying pan, melt 2 tablespoons of butter
  • Add the onion and garlic mixture
  • Cook on medium heat until the onion and garlic turn slightly brown, approximately 5 minutes
  • Add the broccolini and cook for an additional 12 minutes
  • Add the flour and stir constantly for another 5 minutes
  • Add the milk gradually while stirring
  • Add the chardonnay wine and continue to stir until the mixture starts to thicken but is very smooth
  • Reserve 1/2 cup of cheddar cheese and add the remaining cheddar cheese while stirring
  • Season to taste with fresh ground sea salt and pepper
  • Stir in the Pasta
  • Butter a 13x9x2 baking dish, round pie dish or 8 small ramekins to make individual portions
  • Add the macaroni mixture and sprinkle with the cheddar cheese
  • Bake for approximately 20 minutes or until the cheese is bubbling
  • Serve immediately
