Broccoli croquettes

Ingredients

  • 1 bag Arctic Gardens broccoli florets
  • 3 eggs
  • 1 1/2 cups (375 ml) grated cheese
  • 1 cup (250 ml) breadcrumbs
  • 1/2 tsp (2 ml) salt
  • 1/4 tsp (1 ml) ground pepper

Instructions

  • In a pot of boiling salted water, cook the broccoli florets for 5 minutes.
  • Drain, rinse under cold water and drain again.
  • Using a food processor, process half of the broccoli to obtain a coarse purée with pieces.
  • Transfer to a large bowl and repeat with remaining broccoli.
  • Add eggs, cheese, breadcrumbs, salt, and pepper.
  • Mix well and let stand for 15 minutes.
  • Preheat the oven to 475 oF (245 oC).
  • Use about 2 tbsp (30 ml) of the broccoli mixture to make croquettes.
  • Shape into logs.
  • Place on a baking sheet lined with parchment paper.
  • Bake for 10 minutes, turn and continue cooking for 7 to 10 minutes or until croquettes are crispy and golden.
  • Serve as is or with a dip.
