Ingredients

  • 175 mL (¾ cup) dry white wine
  • 60 mL (¼ cup) fresh cream
  • 1 red bell pepper
  • 1 fennel bulb
  • 4 fresh gourmet-cut salmon
  • To taste, salt and pepper
  • 1 bunch chives

Instructions

  • Preheat oven to 180°C (350°F).
  • Place salmon pavés in a baking dish, sprinkle with wine and spread vegetables over fish.
  • Cover with aluminum foil and bake for about 25 minutes or until fish flakes easily.
  • Remove pavés and vegetables and set aside.
  • Combine cooking juice with fresh cream.
  • Top pavés with sauce.
  • Garnish with minced chives.
  • Salt and pepper to taste.
