Ingredients

  • 80g vanilla whey protein (I used Jamie Eason's Whey Isolate in Natural Vanilla)
  • 1/2 cup baking stevia (or sweetener of choice)
  • 1/4 cup coconut flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt (optional)
  • 1/4 cup cashew butter (I used You Fresh Naturals Cashew Coconut Butter in Birthday Cake)
  • 1/2 cup nonfat plain greek yogurt
  • 2 egg whites
  • 1 tsp. vanilla extract
  • 1 tsp. butter extract
  • 2 tsp. natural sprinkles (optional)

Instructions

  • Preheat oven to 350 degrees F.
  • Whisk together dry ingredients (through salt).
  • Mix in wet ingredients until just combine (through butter extract).
  • Add sprinkles if desired (optional).
  • Place rounded tablespoons of cookie dough on a baking sheet lightly coated with cooking spray.
  • Press flat with a fork or wetted fingertips (batter will be sticky).
  • Bake for 8-10 minutes until cookies are golden brown underneath. Enjoy!
