Ingredients

  • 2 1/2 cups (625 mL) Robin Hood® Original All Purpose Flour
  • 1 tsp (5 mL) salt
  • 1 tsp (5 mL) baking soda
  • 1/2 cup (125 mL) Crisco® All-Vegetable Shortening
  • 2 cups (500 mL) sugar
  • 2 cups (500 mL) mashed ripe banana
  • 3 large eggs, lightly beaten
  • 1/2 cup (125 mL) chopped walnuts or pecans
  • 1 tsp (5 mL) vanilla extract

Instructions

  • Heat oven to 350ºF (180ºC). Grease and line with parchment paper two 8" x 4" (1.5 L) loaf pans.
  • Combine flour, salt, and baking soda in a small bowl.
  • Combine shortening, sugar, mashed banana, egg, nuts and vanilla. Beat using an electric mixer until well blended.
  • Add the dry ingredients and stir just until moistened. Pour into prepared pan.
  • Bake for 60 to 65 minutes, or until a toothpick inserted in the centre comes out clean.
  • Remove from oven and let cool in pan for 10 minutes. Remove from pan and cool on wire rack.
