Ingredients

  • 4-1/2 cups small cauliflower florets, divided
  • 2 Tbsp. Kraft Italian Zesty Lime Dressing
  • 1 pkg. (24 g) 30%-less-sodium taco seasoning mix
  • 1 cup shredded carrots
  • 1/2 cup taco sauce
  • 1/4 cup chopped fresh cilantro
  • 1 Tbsp. lime juice
  • 8 small corn tortillas, warmed
  • 1/2 cup Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese

Instructions

  • Use pulsing action of food processor to process half the cauliflower until coarsely chopped; spoon into large bowl.
  • Repeat with remaining cauliflower.
  • Heat dressing in large nonstick skillet on medium heat.
  • Add cauliflower; cook 8 to 10 min. or until lightly browned, stirring occasionally.
  • Stir in taco seasoning mix.
  • Add carrots and next 3 ingredients; mix well.
  • Cook 1 to 2 min. or until heated through and slightly thickened, stirring frequently.
  • Remove from heat.
  • Stack tortillas; wrap in paper towel.
  • Microwave on HIGH 1 min.
  • Spoon cauliflower mixture evenly down centers of tortillas.
  • Sprinkle with cheese; roll up.
  • Place, seam sides down, on baking sheet sprayed with cooking spray.
  • Bake 10 to 12 min. or until taquitos are crisp.
