Apple Oat Bran Muffins

Ingredients

  • 1 1/4 cups (300 mL) dry oat bran high fibre hot cereal
  • 1 cup (250 mL) Robin Hood® Original All Purpose Flour
  • 1/2 cup (125 mL) packed brown sugar
  • 1 tbsp (15 mL) baking powder
  • 1/2 tsp (2 mL) baking soda
  • 2 tsp (10 mL) ground cinnamon
  • 1/4 tsp (1 mL) salt
  • 1/4 cup (50 mL) Crisco® Canola Oil
  • 2 eggs
  • 2/3 cup (150 mL) milk
  • 1 cup (250 mL) applesauce
  • 1/2 cup (125 mL) raisins

Topping :

  • 1 tsp (5 mL) ground cinnamon mixed with 1 tsp (5 mL) granulated sugar

Instructions

  • Heat oven to 400ºF (200ºC).
  • Grease or line with baking paper cups, 12 large muffin cups.
  • In a medium mixing bowl, combine oat bran cereal, flour, brown sugar, baking powder, baking soda, cinnamon and salt.
  • In a small mixing bowl, whisk together canola oil, eggs, milk and applesauce.
  • Add to dry ingredients; stir to combine.
  • Stir in raisins.
  • Fill muffin cups no more than 2/3 full.
  • Sprinkle with cinnamon sugar topping.
  • Bake at 400ºF (200ºC) for 15 to 18 minutes or until toothpick inserted into centre comes out clean.
  • Cool on rack for 10 minutes.
  • Remove from pan and cool completely.
