Ingredients

  • To taste, salt and pepper
  • to garnish (about 30 g/1 oz.) Slivers of Parmesan cheese
  • 1/2 red onion
  • 2 red apples
  • 2 asian pears
  • 500 mL (2 cups) escarole, shredded
  • 500 mL (2 cups) Compliments Spring Mix
  • 15 mL (1 tbsp.) maple syrup
  • 30 mL (2 tbsp.) white wine vinegar
  • 15 mL (1 tbsp.) Compliments olive oil

Instructions

  • In a large bowl, combine olive oil, white wine vinegar and maple syrup.
  • Add spring mix, escarole, Asian pears, apples and red onion.
  • Toss until well coated.
  • Salt and pepper to taste.
  • Divide among 4 plates and garnish generously with Parmesan slivers.
  • Serve as a side dish with fish or grilled chicken.
