American Festive Fruit Cake

Ingredients

  • 250 g dates, pitted
  • 250 g glace pineapple
  • 125 g glace apricots
  • 125 g each of red and green glace cherries
  • 250 g brazil nuts
  • 2 eggs
  • 1/2 cup (100g) brown sugar
  • 1 tablespoon rum
  • 1 teaspoon vanilla essence
  • 90 g butter, softened
  • 1/2 (75g) plain flour
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 12 tablespoons rum or brandy, extra

Instructions

  • Preheat the oven to 150 degrees C. Grease and line a 23 x 12 cm loaf tin.
  • Chop the dates, pineapple and apricots into fairly large pieces, but leave the cherries and nuts whole. Mix well.
  • Beat the eggs until light and fluffy, add the sugar, rum, vanilla and soft butter. Continue beating until well blended.
  • Sift the flour with the baking powder and salt, add to the creamed mixture with the fruit and nuts, and mix well. Spoon into the prepared tin.
  • Bake for approximately 90 minutes, or until the cake is firm to touch and a skewer comes out clean.
  • The cake may have a surface layer of melted butter - on cooling this will settle and moisten the cake.
  • Remove from the oven, and while still hot, pour extra rum or brandy over.
  • Cool in the tin standing on a wire rack.
