All-Bran* Greek Yogurt Mocha Mousse

Ingredients

  • 300 mL or 1 ¼ cups All-Bran* Buds cereal
  • 60 mL or ¼ cup butter
  • 45 mL or 3 tbsp cocoa powder
  • 60 mL or ¼ cup strong brewed coffee, cooled
  • 425 mL or 1 ¾ cups plain Greek yogurt
  • 30 mL or 2 tbsp honey
  • 5 mL or 1 tsp vanilla
  • 6 dark chocolate squares
  • 4 fresh mint leaves (optional)

Instructions

  • In saucepan, melt butter over medium heat; remove from heat and stir in 30 mL (2 tbsp) of the cocoa powder until dissolved.
  • Stir in cereal; spoon into four 250 mL (1 cup) dessert bowls or jars and set aside.
  • In a large bowl, stir together the coffee and cocoa powder until dissolved; whisk in yogurt, honey and vanilla until well combined.
  • Spoon over cereal base in dessert bowls; refrigerate for at least 1 hour or until set.
  • Roughly chop the chocolate; sprinkle evenly over the mousse.
  • Garnish with mint leaves (if using).
