Ingredients

  • 1 Pizza dough
  • 1 Cauliflower
  • 4 Tomatoes
  • 0.5 tablespoon Crème fraîche
  • 75 mL (5 tablespoon) grated parmesan cheese
  • 250 mL (1 cup) grated gruyère cheese
  • 1 tablespoon Mustard
  • 1 tablespoon Herbes de Provence
  • 45 mL (3 tablespoon) Olive oil
  • 4 pinch Salt

Instructions

  • Preheat the oven to 350 °F.
  • Steam the cauliflower for 10 minutes, it should remain crisp.
  • Roll out the crust on the baking sheet and precook for 8 minutes.
  • Take it out and let it cool.
  • Wash the tomatoes, wipe and peel them, then cut into slices of about 1 cm thick while removing juice and seeds.
  • Mix in a bowl the cream and mustard and spread it on the crust.
  • Cover with the tomato slices as tight as possible.
  • Add salt, sprinkle with the herbs and parmesan and cover with gruyère or thin slices of mozzarella.
  • Put in the oven for 20 minutes.
  • Serve the tomato pie along with steamed, crisp cauliflower drizzled with a little olive oil.
