Simple Spice Muffins

Ingredients

  • 300 ml or 1 1/4 cups all-purpose flour
  • 10 ml or 2 tsp baking powder
  • 1 ml or 1/4 tsp baking soda
  • 10 ml or 2 tsp ground cinnamon
  • 375 ml or 1 1/2 cups All-Bran Buds* cereal
  • 50 ml or 1/4 cup vegetable oil
  • 1egg
  • 125 ml or 1/2 cup regular or golden raisins
  • 1 ml or 1/4 tsp salt
  • 300 ml or 1 1/4 cups boiling water
  • 125 ml or 1/2 cup firmly-packed brown sugar
  • 175 ml or 3/4 cup skim milk

Instructions

  • Stir together flour, baking powder, cinnamon, baking soda and salt; set aside.
  • In large mixing bowl, stir together cereal and boiling water; let stand 2 minutes or until water is absorbed.
  • Mix sugar into softened cereal until well combined.
  • Stir in milk and oil.
  • Add egg and raisins; beat well.
  • Add flour mixture, stirring just until combined.
  • Portion batter evenly into lightly-greased large muffin-pan cups.
  • Bake at 200°C (400°F) about 20 minutes or until tops of muffins are light golden brown and spring back when lightly touched.
  • Let muffins cool 5-7 minutes, then turn out onto wire rack to cool completely.
