Roasted Garlic and Feta Hummus

Ingredients

  • 6 cloves of garlic
  • 3 tablespoons olive oil
  • 1 small can chickpeas, drained
  • ½ cup feta cheese juice
  • ½ lemon
  • salt and pepper
  • extra olive oil for serving fresh thyme pink salt, optional

Instructions

  • Place the garlic in a sheet of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap up and bake at 360°F for 30 minutes.
  • Place garlic in a food processor with chickpeas, feta, lemon, and remaining 2 tablespoons of oil.
  • Blend until smooth and season with salt and pepper. If it seems too dry, just add more oil.
  • Spoon into a bowl, and top with a drizzle of olive oil, thyme, and salt.
