Ingredients

  • 1 tbsp Oil
  • 500g lean beef mince
  • 1 medium (150g) onion, finely diced
  • 1 pkt MAGGI Mexican Nachos
  • 1 can (400g) chopped tomatoes
  • 1 can (400g) red kidney beans, rinsed
  • 1 medium (200g) avocado, halved, stone removed, diced
  • 1 can (400g) corn kernels, rinsed and drained
  • 1 medium (150g) tomato, chopped
  • 2 tbsp fresh coriander, chopped
  • 1 lime, juiced
  • 2 cups cooked rice
  • 1/2 cup (60g) tasty cheese, grated
  • 1/3 cup (80g) light sour cream

Instructions

  • Heat oil in a large frying pan, add beef and onions, cook for 5 minutes or until browned.
  • Add MAGGI Mexican Nachos, tomatoes and beans. Cook for 5 minutes or until cooked
  • In a medium bowl; combine avocado, corn, tomato, coriander and lime juice to make a salsa
  • Add rice to a large serving bowl, cover with mince, sprinkle with cheese top with salsa, dollop sour cream to finish.
