Ingredients

  • 1 tsp (5 mL) canola oil
  • 1 1/2 lb (681 g) boneless, skinless chicken thighs cut in half crosswise
  • 1/2 cup (125 mL) chopped onion
  • 1/2 cup (125 mL) sliced celery
  • 1/2 tsp (3 mL) curry powder
  • 2 cups (500 mL) CAMPBELL’S® 30% Less Sodium Ready to Use Chicken Broth
  • 1/2 cup (125 mL) coarsely chopped dried apricots
  • 1/4 cup (60 mL) raisins
  • 1 cup (250 mL) carrots matchsticks
  • 3/4 cup (185 mL) plain yogurt
  • 4 cups (1 L) hot cooked white rice

Instructions

  • Brown chicken well in heated oil in non-stick skillet at medium-high heat – about 5 minutes per side. Add onion,celery and curry powder. Cook and stir until vegetables are tender – about 5 minutes.
  • Stir in broth,apricots and raisins. Reduce heat and simmer 20 minutes.
  • Add carrots and cook for 10 minutes,stirring occasionally. Remove from heat.
  • Stir in yogurt and serve with rice.

Recipe tips
Apricots and raisins contain fibre – an important part of a healthy diet. With the curry powder in this dish,they create sweet and spicy flavour accents,reminiscent of Morocco. As a recipe variation,add crunchy almonds and serve over couscous instead of rice.
