Delicious Mango and Coconut Chia Pudding

Ingredients

  • 2 large ripe mangoes
  • 1.5 cups coconut milk
  • 1 cup water
  • ¼ cup chia seeds
  • Diced mangoes, for topping
  • 2 tbsp agave (You can also use honey or just regular sugar)
  • A fat pinch of salt

Instructions

  • Puree mangoes until smooth. Sweeten with a touch of honey if your mangoes are not sweet. (I skipped the honey since my mangoes were already sweet)
  • Place the mango puree in a mason jar and keep in the fridge.
  • Mix together coconut milk and water. Sweeten with honey to taste and add a pinch of salt.
  • Mix in the chia seeds and refrigerate for a few hours or overnight.
  • If pudding is too gooey the following day, add more coconut milk or water.
  • Divide pudding among 6 glasses and top with a layer of mango purée.
  • Garnish with diced mangoes and serve cold.
