Ingredients

  • 30 mL (2 tbsp.) olive oil
  • 1 onion, coarsely chopped
  • 5 cloves garlic, chopped
  • 2 cans (796 mL ea.) whole tomatoes
  • 375 mL (1½ cups) sodium-reduced vegetable broth
  • 30 mL (2 tbsp.) sugar
  • To taste, salt and pepper
  • 125 mL (½ cup) 15% M.F. cream
  • To taste, hot pepper flakes (optional)

Instructions

  • Heat olive oil in a saucepan over low heat and fry onion and garlic for a few minutes without browning.
  • Add canned tomatoes, vegetable broth, sugar, salt, and pepper. 
  • Simmer over low heat for an hour. 
  • Puree in a blender until smooth.
  • Add cream and hot pepper flakes if using. 
  • Garnish with grilled cheese cubes.
