Instructions

Prepare ingredients Preheat oven to 350°F. Place cream cheese in a large bowl and set aside to soften at room temperature, 5-10 minutes. Place graham cracker crusts on a baking sheet and set aside until Step 4.
Make cherry compote In a medium pot over high heat, combine white wine, cherries, and ½ cup sugar and cook until sugar dissolves and liquid begins to bubble, about 2 minutes. Then, reduce heat to medium high and simmer, stirring frequently, until reduced by half, 10-12 minutes. Remove pot from heat and set aside to cool, 10-15 minutes.
Make cheesecake filling While compote cools, to bowl with softened cream cheese, add 1 egg, remaining sugar, and a pinch of salt and whisk until smooth. Add sour cream and vanilla to bowl and whisk vigorously until fully combined and no lumps remain.
Bake cheesecakes Pour cheesecake filling into graham cracker crusts on baking sheet, dividing evenly. Transfer to oven and bake until centers are set, 20-25 minutes. Use the downtime to relax and enjoy the sweet smells filling your kitchen.
