  • 4 graham cracker crusts

Instructions

  • Prepare ingredients Preheat oven to 350°F. Place cream cheese in a large bowl and set aside to soften at room temperature, 5-10 minutes. Place graham cracker crusts on a baking sheet and set aside until Step 4.
  • Make cherry compote In a medium pot over high heat, combine white wine, cherries, and ½ cup sugar and cook until sugar dissolves and liquid begins to bubble, about 2 minutes. Then, reduce heat to medium high and simmer, stirring frequently, until reduced by half, 10-12 minutes. Remove pot from heat and set aside to cool, 10-15 minutes.
  • Make cheesecake filling While compote cools, to bowl with softened cream cheese, add 1 egg, remaining sugar, and a pinch of salt and whisk until smooth. Add sour cream and vanilla to bowl and whisk vigorously until fully combined and no lumps remain.
  • Bake cheesecakes Pour cheesecake filling into graham cracker crusts on baking sheet, dividing evenly. Transfer to oven and bake until centers are set, 20-25 minutes. Use the downtime to relax and enjoy the sweet smells filling your kitchen.
  • Plate cherry cheesecakes Once baked, remove cheesecakes from oven and set aside to cool slightly, 5-10 minutes. Spoon cherry compote over cheesecakes. Enjoy your sweet treat!
