Cheesy Bacon-Chive Smashed Potatoes

Ingredients

  • 2 lb. (900 g) Yukon gold potato es (about 8), peeled, cut into chunks
  • 1/2 cup Philadelphia Chive & Onion Cream Cheese Product
  • 1/3 cup fully cooked bacon pieces
  • 2 Tbsp. chopped fresh parsley

8 servings, 1 cup (250 mL) each

Instructions

  • Cook potatoes in large pan of boiling water 20 min. or until tender.
  • Drain potatoes, reserving 1/2 cup cooking water.
  • Return potatoes and reserved cooking water to pan.
  • Add cream cheese product.
  • Use back of large spoon to smash potatoes slightly while mixing them with the cream cheese just until blended.
  • Stir in bacon and parsley.
