Ingredients

  • 1 TBSP MARGARINE, BUTTER OR COCONUT OIL
  • 4 RIPE BANANAS
  • 1/2 CUP PACKED BROWN SUGAR OR COCONUT SUGAR
  • 2 CUPS SILK CASHEWMILK OR COCONUTMILK
  • 1 TSP VANILLA EXTRACT
  • 3/4 CUP MINI CHOCOLATE CHIPS OR TOASTED PECANS, OPTIONAL

Instructions

  • Melt margarine in a large nonstick saute pan over medium heat.
  • Peel and cut bananas lengthwise.
  • Place bananas, cut side down, in hot pan and sear for 1 minute.
  • Turn bananas over and sear the other side.
  • Cook for another 5 minutes, stirring (bananas will start to fall apart).
  • Add brown sugar and cook until sugar is dissolved, stirring constantly.
  • Remove from heat and puree in a blender or food processor.
  • Add Silk and vanilla, stirring to combine.
  • Chill mixture for 1 hour.
  • Process in ice cream machine according to directions.
  • Add chocolate chips in during the last 5 minutes of processing.
  • Serve immediately or store in freezer.
  • If freezing, place in refrigerator for 10 minutes before serving to soften.
